I need to stop posting photos of my food achievements on places, right? Because then everyone wants a recipe and then I have to type it up! But I’m pretty proud of this sucker.
I didn’t want to make a birthday cake for Brandon on his birthday, few a few reasons. One, we try to avoid wheat. Two, he was going to be gone all day anyway. Three, he didn’t even ask for a cake! But everyone needs something tasty on their birthday, right? I decided to whip up this cobbler by combining my sister’s recipe with some random Paleo ones. It’s sugary still, but no wheat, so a bit better for our tummies.
What’s great about cobbler is you can rework the ingredients how you need them. Use whatever nuts you have on hand or even whatever fruit! I decided to use blackberries because they’re Brandon’s favorite, plus peaches because I needed to get rid of them.
No-wheat Blackberry & Peach Cobbler
1/2 lbs peaches, sliced (frozen or fresh)
8 oz blackberries
1 cup + 1 tbsp almond flour
1/2 cup brown sugar
1/4 cup walnuts, chopped
1 tsp cinnamon
2 tbsp melted butter
2 tbsp olive oil
1. Preheat oven to 350 F
2. Toss fruit with 1/4 cup brown sugar and 1 tbsp flour. Spread in 9×9 dish.
3. Mix almond flour, egg, walnuts, cinnamon, butter & oil together.
4. Spread over fruit (doesn’t have to be even).
5. Bake 30 minutes and then enjoy!
